Pacific moisture rolls in from the coast and collides with the highlands of San Marcos, creating rainfall that defines the region. This warmth and humidity accelerates cherry development, producing fruit-forward lots with natural sweetness that honey processing only amplifies.
Honey processing — pulped but dried with the sticky mucilage intact — sits between the clarity of washed and the intensity of natural. Our lot was processed on ceramic tiles over 18 days of careful monitoring. The result is a cup with a syrupy body and a dried-mango sweetness that lingers long after the cup is empty.
